Ingredients

Scale
  • 1 lb boneless chicken thighs
  • 1 cup plain full-fat yogurt
  • 2 tbsp tandoori masala
  • 1 tbsp grated fresh ginger
  • 4 garlic cloves, minced
  • 2 tbsp lemon juice
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. In a large bowl, combine yogurt, tandoori masala, ginger, garlic, lemon juice, and salt to create a smooth paste. Add the chicken thighs and coat them well. Cover and refrigerate for at least 1 hour; overnight is ideal.
  2. Preheat grill to medium-high heat (375°F) or oven to 425°F (220°C) with a lined baking sheet.
  3. Grill chicken for 6-8 minutes per side until charred and cooked through (internal temperature should reach 165°F). For oven cooking, bake for about 25-30 minutes.
  4. Let rest for 5 minutes before garnishing with cilantro. Serve hot with naan or rice alongside cucumber raita or mint chutney.
