  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract

Instructions

  1. Begin by brewing the espresso and allowing it to cool.
  2. In a mixing bowl, combine mascarpone cheese, sugar, and vanilla extract; mix until smooth.
  3. In another bowl, beat the egg yolks until pale and thick. Fold gently into the mascarpone mixture.
  4. Quickly dip each ladyfinger into the cooled coffee and layer them tightly in your dish.
  5. Spread half of the mascarpone mixture over the first layer of ladyfingers, then repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mix.
  6. Sift cocoa powder on top, then refrigerate for at least 4 hours or overnight.
