- 4 tablespoons unsalted butter
- 1 cup full-fat sour cream
- 1 ½ cups sharp cheddar cheese, shredded

Instructions
- Preheat the oven to 400°F (200°C). Scrub the russet potatoes clean.
- Bake the potatoes directly on the oven rack for 45-60 minutes until tender.
- Allow them to cool slightly, then slice in half lengthwise and scoop out the insides into a mixing bowl.
- Mix potato flesh with butter, sour cream, half of the cheddar cheese, bacon bits, salt, and pepper until creamy.
- Spoon the filling back into the potato skins and top with remaining cheese and additional bacon if desired.
- Return potatoes to the oven at 375°F (190°C) for 15-20 minutes until cheese is bubbly and golden brown.
