  • 3 cups chopped cabbage
  • 1 cup grated carrots
  • 1 cup diced bell peppers (mixed colors)
  • 1 cup diced sweet onion
  • 1 cup white vinegar
  • ½ cup granulated sugar
  • 2 tsp mustard seeds
  • 2 tsp celery seeds
  • Salt and pepper to taste

Instructions

  1. Wash and chop the cabbage into thin strips; finely dice the bell peppers and onions.
  2. In a large bowl, combine chopped vegetables and mix well.
  3. In a saucepan over medium heat, combine vinegar, sugar, mustard seeds, celery seeds, salt, and pepper. Stir until sugar dissolves.
  4. Pour warm brine over vegetable mixture and stir gently to coat evenly.
  5. Cover tightly with plastic wrap or transfer to jars; refrigerate for at least 24 hours to marinate.
