  • 2 tbsp high-quality extra virgin olive oil
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 1 cinnamon stick
  • 2 tsp smoked paprika
  • 1/2 cup dried apricots, chopped
  • 1/4 cup fresh cilantro or parsley, chopped (for garnish)
  • Juice of 1 lemon

Instructions

  1. Prep all ingredients: chop the onion and dried apricots, and mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken thighs skin-side down and cook for about 6-7 minutes per side until golden brown. Remove chicken and set aside.
  3. In the same skillet, sauté onions for about 5 minutes until translucent. Add minced garlic and cook until fragrant.
  4. Stir in cumin, smoked paprika, and the cinnamon stick. Add chopped apricots and stir to combine.
  5. Pour enough water (or chicken broth) into the skillet to cover the chicken halfway; add lemon juice before returning the chicken to the skillet.
  6. Cover and reduce heat to low; simmer for about 30 minutes until chicken is cooked through and tender.
