  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tbsp extra virgin olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 8 small flour or corn tortillas

Instructions

  1. Preheat your skillet over medium-high heat. Add olive oil and let it shimmer.
  2. Add shrimp to the skillet and season with half of the spices. Sauté until pink and opaque (about 3-4 minutes). Remove shrimp and set aside.
  3. In the same skillet, add more olive oil if needed and sauté sliced peppers and onions until tender and slightly charred (about 5-7 minutes).
  4. Return shrimp to the pan along with remaining spices; stir for another minute until fragrant.
  5. Warm tortillas in another pan or microwave.
  6. Serve by loading each tortilla with shrimp and veggies; top with salsa, guacamole, or sour cream as desired.
