Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp Cajun seasoning
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup bell peppers (mixed red and green), sliced
  • 4 cloves fresh garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 green onions, chopped (for garnish)

Instructions

  1. Cook the Pasta: Boil salted water in a large pot, add pasta, and cook until al dente (8-10 minutes). Drain and toss with olive oil.
  2. Sauté the Chicken: In a skillet over medium-high heat, heat olive oil. Season chicken with Cajun seasoning and cook for 6-7 minutes per side until golden brown. Remove from skillet and keep warm.
  3. Add Veggies: In the same skillet, add bell peppers and garlic; sauté until softened (4-5 minutes).
  4. Create Sauce: Pour in heavy cream and additional Cajun seasoning; simmer for about 3-4 minutes until thickened.
  5. Combine: Return chicken to the skillet with the cooked pasta; mix until well-coated in sauce.
  6. Serve: Garnish with chopped green onions and freshly grated Parmesan before enjoying!
