  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups fresh romaine lettuce, chopped
  • ½ cup Caesar dressing
  • ½ cup grated Parmesan cheese
  • 4 large flour tortillas
  • ½ cup croutons (optional)

Instructions

  1. Preheat grill or skillet over medium heat. Season chicken with salt and pepper. Grill for 6-7 minutes per side until golden brown and cooked through (internal temperature of 165°F). Let rest before slicing.
  2. In a large bowl, combine chopped romaine lettuce and grated Parmesan cheese. Add any additional veggies if desired.
  3. In another bowl, mix Caesar dressing with croutons if using.
  4. Lay out each tortilla. Layer salad mix followed by sliced chicken and drizzle with dressing.
  5. Fold in sides of tortilla then roll tightly from bottom to top to secure fillings.
