Ingredients
  

Salad Ingredients
  • 2 medium cucumbers sliced thinly
  • 1 cup carrots julienned
  • 1 cup red bell pepper sliced thinly
  • 1 cup green onions chopped
  • 1/4 cup fresh cilantro chopped
Dressing
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup for vegan option
  • 1 teaspoon sesame seeds for garnish

Method
 

Prepare the Vegetables
  1. Slice the cucumbers thinly and place them in a mixing bowl.
  2. Julienne the carrots and add them to the bowl.
  3. Slice the red bell pepper and chop the green onions, then add to the bowl.
  4. Chop the fresh cilantro and mix it in with the vegetables.
Make the Dressing
  1. In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, and honey until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss until all ingredients are well coated.
  2. Sprinkle sesame seeds on top as a garnish before serving.

Notes

For added protein, consider adding tofu or grilled chicken to the salad.
