Method
Prepare the Cake
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the mashed bananas and vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk. Mix until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
Prepare the Frosting
- In a mixing bowl, beat the softened cream cheese and butter together until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until the frosting is light and fluffy.
Assemble the Cake
- Once the cakes are completely cool, place one layer on a serving plate and spread a layer of cream cheese frosting on top.
- Place the second layer on top and frost the top and sides of the cake with the remaining cream cheese frosting.
- Slice and serve the cake. Enjoy!

For added flavor, you can mix in chopped nuts or chocolate chips into the cake batter.
