Ingredients
  

Chicken and Rice
  • 1 lb boneless chicken breasts cut into bite-sized pieces
  • 2 cups cooked rice white or brown
  • 1 tbsp olive oil for cooking chicken
  • 1 cup broccoli florets steamed
  • 1 cup carrot shredded
  • 1 cup cucumber sliced
Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha adjust to taste
  • 1 tbsp lime juice

Method
 

Cook the Chicken
  1. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook until golden brown and cooked through, about 7-10 minutes.
  2. Remove from heat and set aside.
Prepare the Bang Bang Sauce
  1. In a mixing bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth.
Assemble the Bowls
  1. In each serving bowl, layer cooked rice, followed by the cooked chicken, steamed broccoli, shredded carrot, and sliced cucumber.
  2. Drizzle the bang bang sauce over the top of each bowl.
  3. Serve immediately and enjoy!

Notes

Feel free to customize the vegetables based on your preference. You can also add avocado or sesame seeds for extra flavor.
