Method
Prepare the Beef Filling
- In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes.
- Add diced onion and minced garlic to the skillet and cook until softened, about 3-4 minutes.
- Stir in cumin, chili powder, and salt. Cook for another 2 minutes.
- Remove from heat and mix in shredded cheddar cheese.
Make the Red Sauce
- In a mixing bowl, combine the red enchilada sauce, cumin, garlic powder, and onion powder.
Assemble the Enchiladas
- Preheat the oven to 350°F (175°C).
- Spread 1/2 cup of the red sauce on the bottom of a baking dish.
- Fill each tortilla with the beef mixture, roll them up, and place seam-side down in the baking dish.
- Pour the remaining red sauce over the enchiladas, ensuring they are well covered.
- Bake in the preheated oven for 20 minutes.
Serve
- Remove from oven and let cool for a few minutes.
- Serve with sour cream and garnish with chopped cilantro.
Notes
For a spicier version, add diced jalapeños to the beef filling.
