Vegetable Omelette
  • 4 large eggs
  • 1/2 cup bell pepper diced
  • 1/2 cup onion diced
  • 1/2 cup spinach fresh
  • 1 tbsp olive oil for cooking
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Egg and Avocado Toast
  • 4 large eggs poached or fried
  • 4 slices whole grain bread toasted
  • 2 ripe avocados mashed
  • 1 tbsp lemon juice to taste
  • 1 tsp salt to taste
  • 1/2 tsp red pepper flakes optional

Method
 

Scrambled Eggs
  1. In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
  2. Heat butter in a skillet over medium heat.
  3. Pour the egg mixture into the skillet and gently stir with a spatula until the eggs are softly scrambled.
  4. Remove from heat and serve immediately.
Vegetable Omelette
  1. In a mixing bowl, whisk together eggs, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Add bell pepper and onion, sauté until softened.
  4. Add spinach and cook until wilted.
  5. Pour the egg mixture over the vegetables and cook until the edges are set, then fold and serve.
Egg and Avocado Toast
  1. Mash avocados in a bowl and mix with lemon juice and salt.
