Method
Marinate the Chicken
- In a large bowl, combine chicken thighs, soy sauce, browning sauce, salt, black pepper, thyme, garlic, ginger, and lime juice. Mix well to coat the chicken. Cover and marinate for at least 1 hour, preferably overnight.
Cook the Chicken
- Heat vegetable oil in a large pot over medium-high heat. Remove chicken from marinade and brown on all sides, about 5-7 minutes. Remove chicken and set aside.
- In the same pot, add onion, bell pepper, carrots, and scallions. Sauté for about 5 minutes until softened.
- Return the chicken to the pot. Add chicken broth, paprika, and allspice. Bring to a boil, then reduce heat to low.
- Cover and simmer for 45 minutes, or until the chicken is cooked through and tender.
Serve
- Remove chicken from the pot and let rest for a few minutes. Serve hot with rice or dumplings, spooning the sauce and vegetables over the top.
Notes
For extra flavor, you can add Scotch bonnet pepper to the pot while cooking for a spicy kick.
