Ingredients
  

Butter Beans
  • 2 cups dried butter beans soaked overnight
  • 4 cups water for cooking
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon thyme dried or fresh
  • 1 cup vegetable broth for added flavor

Method
 

Preparation
  1. Soak the dried butter beans in water overnight.
  2. Drain and rinse the soaked beans in a colander.
Cooking
  1. In a pot, heat olive oil over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another minute.
  4. Add the soaked butter beans, water, vegetable broth, salt, pepper, and thyme to the pot.
  5. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until beans are tender.
  6. Adjust seasoning as needed before serving.

Notes

Butter beans can be served as a side dish or over rice for a complete meal.
