Preparation
- Soak the dried butter beans in water overnight.
- Drain and rinse the soaked beans in a colander.
Cooking
- In a pot, heat olive oil over medium heat.
- Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for another minute.
- Add the soaked butter beans, water, vegetable broth, salt, pepper, and thyme to the pot.
- Bring to a boil, then reduce heat and simmer for about 30 minutes, or until beans are tender.
- Adjust seasoning as needed before serving.
Notes
Butter beans can be served as a side dish or over rice for a complete meal.
