Method
Prepare the Cake
- Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a mixing bowl, combine the butter pecan cake mix, water, vegetable oil, and eggs. Mix on medium speed for 2 minutes until well blended.
- Fold in the chopped pecans gently with a spatula.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake in the preheated oven for 30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Prepare the Frosting
- In a mixing bowl, beat the softened cream cheese and butter together until creamy.
- Gradually add the powdered sugar and vanilla extract, mixing until smooth and fluffy.
- Once the cake is completely cooled, spread the frosting evenly over the top.
Notes
For added flavor, you can sprinkle extra toasted pecans on top of the frosting before serving.
