  • 1 box butter pecan cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup chopped pecans toasted
Frosting Ingredients
  • 1 package cream cheese softened
  • 1/2 cup butter softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a mixing bowl, combine the butter pecan cake mix, water, vegetable oil, and eggs. Mix on medium speed for 2 minutes until well blended.
  3. Fold in the chopped pecans gently with a spatula.
  4. Pour the batter into the prepared baking pan and smooth the top.
  5. Bake in the preheated oven for 30 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Prepare the Frosting
  1. In a mixing bowl, beat the softened cream cheese and butter together until creamy.
  2. Gradually add the powdered sugar and vanilla extract, mixing until smooth and fluffy.
  3. Once the cake is completely cooled, spread the frosting evenly over the top.

Notes

For added flavor, you can sprinkle extra toasted pecans on top of the frosting before serving.
