Salad Ingredients
  • 4 cups shredded carrots
  • 1 cup chopped celery
  • 1 cup raisins
  • 1/2 cup chopped walnuts optional
  • 1/4 cup fresh parsley chopped
Dressing Ingredients
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the shredded carrots, chopped celery, raisins, walnuts, and parsley.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the salad mixture and toss until everything is evenly coated.
  2. Serve immediately or refrigerate for 30 minutes to let the flavors meld.

Notes

This salad can be made a day in advance. Just add the dressing right before serving to keep the carrots crunchy.
