Method
Prepare the Chicken
- In a bowl, combine chicken pieces with soy sauce, hoisin sauce, and rice vinegar. Let marinate for 10 minutes.
Cook the Chicken
- Heat vegetable oil in a wok over medium-high heat. Add marinated chicken and stir-fry until cooked through, about 5-7 minutes.
Add Vegetables
- Add garlic, ginger, bell pepper, broccoli, and carrots to the wok. Stir-fry for an additional 3-4 minutes until vegetables are tender-crisp.
Thicken the Sauce
- Stir in the cornstarch mixture and cashews. Cook for another 2 minutes until the sauce thickens.
Serve
- Serve hot over steamed rice or noodles.
Notes
For extra flavor, you can add green onions or sesame seeds as a garnish before serving.
