Preparation
- Slice the chicken breast into thin strips and season with a pinch of salt and pepper.
- Prepare the vegetables: cut broccoli into florets, slice the bell pepper and carrot, mince the garlic, and grate the ginger.
- In a small bowl, mix together the soy sauce, oyster sauce, cornstarch mixture, sesame oil, and sugar.
Cooking
- Heat the vegetable oil in a wok over medium-high heat.
- Add the chicken strips to the wok and stir-fry for about 5-7 minutes, or until cooked through.
- Add the garlic and ginger, and stir-fry for an additional minute until fragrant.
- Add the broccoli, bell pepper, and carrot to the wok, and stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
- Pour the sauce over the chicken and vegetables, stirring well to coat. Cook for another 2 minutes until the sauce thickens.
- Remove from heat and serve hot over rice or noodles.
Notes
Feel free to add other vegetables like snap peas or mushrooms for extra flavor and nutrition.
