Ingredients
  

Chicken and Seasoning
  • 4 pieces chicken breasts boneless, skinless
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Sweet Potatoes
  • 4 medium sweet potatoes peeled and cubed
  • 1 tablespoon olive oil for roasting
  • 1 teaspoon cinnamon optional
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Chicken
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, garlic powder, paprika, salt, and black pepper.
  3. Add the chicken breasts to the bowl and coat them evenly with the seasoning mixture.
Prepare the Sweet Potatoes
  1. In another bowl, toss the cubed sweet potatoes with olive oil, cinnamon, salt, and pepper.
  2. Spread the sweet potatoes on a baking sheet in a single layer.
Bake
  1. Place the seasoned chicken breasts on the same baking sheet as the sweet potatoes.
  2. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
Serve
  1. Remove from the oven and let rest for 5 minutes.
  2. Garnish with chopped parsley before serving.

Notes

Feel free to add other vegetables such as bell peppers or onions for extra flavor.
