Ingredients
  

Chicken and Filling
  • 4 pieces chicken breasts boneless and skinless
  • 1 cup spinach fresh, chopped
  • 1 cup cream cheese softened
  • 1 cup mozzarella cheese shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Topping
  • 1 cup marinara sauce for serving

Method
 

Prepare the Chicken
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the cream cheese, spinach, mozzarella cheese, garlic powder, onion powder, salt, and black pepper.
  3. Place the chicken breasts on a clean surface and pound them to an even thickness.
  4. Spread the cheese and spinach mixture evenly over each chicken breast.
  5. Roll up each chicken breast tightly and secure with toothpicks.
Cook the Chicken
  1. Heat a skillet over medium heat and add a little oil.
  2. Sear the chicken roll ups on all sides until golden brown, about 3-4 minutes per side.
  3. Transfer the roll ups to a baking dish and pour marinara sauce over them.
  4. Bake in the preheated oven for 20 minutes or until the chicken is cooked through.
  5. Remove from the oven, let rest for a few minutes, then remove toothpicks and slice before serving.

Notes

Serve with extra marinara sauce on the side for dipping.
