Ingredients
  

Rice
  • 1 cup long-grain white rice rinsed
  • 2 cups water
Flavorings
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon lime zest
  • 1/4 cup fresh cilantro chopped
  • 1 teaspoon salt to taste

Method
 

Cooking the Rice
  1. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and water is absorbed.
  3. Remove from heat and let it sit, covered, for 5 minutes.
Flavoring the Rice
  1. Fluff the rice with a fork and add lime juice, lime zest, chopped cilantro, and salt.
  2. Gently mix until well combined, adjusting salt to taste.

Notes

Cilantro lime rice can be served warm or at room temperature. It pairs well with grilled meats, tacos, or as a base for burrito bowls.
