Marinate the Chicken
- In a bowl, combine chicken pieces, soy sauce, lime juice, and cornstarch. Mix well and let marinate for at least 15 minutes.
Cook the Chicken
- Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Prepare the Coconut Sauce
- In the same skillet, add chopped onion, garlic, and ginger. Sauté until onion is translucent, about 3-4 minutes.
- Pour in the coconut milk, chicken broth, fish sauce, and brown sugar. Stir to combine and bring to a simmer.
Combine and Finish
- Return the cooked chicken to the skillet and simmer for an additional 10 minutes, allowing the flavors to meld.
- Stir in lime juice and garnish with fresh cilantro before serving.
Notes
Serve over rice or noodles for a complete meal. Adjust the level of spiciness by adding chili flakes if desired.
