Ingredients
  

Chicken and Marinade
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tbsp soy sauce for marinating
  • 1 tbsp lime juice for marinating
  • 1 tbsp cornstarch for coating
Coconut Sauce
  • 1 tbsp vegetable oil for cooking
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 can coconut milk full-fat for creaminess
  • 1 tbsp fish sauce optional
  • 1 tbsp brown sugar to balance flavors
  • 1 cup chicken broth low-sodium
  • 1 tbsp lime juice for finishing
  • 1 tbsp fresh cilantro chopped, for garnish

Method
 

Marinate the Chicken
  1. In a bowl, combine chicken pieces, soy sauce, lime juice, and cornstarch. Mix well and let marinate for at least 15 minutes.
Cook the Chicken
  1. Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Prepare the Coconut Sauce
  1. In the same skillet, add chopped onion, garlic, and ginger. Sauté until onion is translucent, about 3-4 minutes.
  2. Pour in the coconut milk, chicken broth, fish sauce, and brown sugar. Stir to combine and bring to a simmer.
Combine and Finish
  1. Return the cooked chicken to the skillet and simmer for an additional 10 minutes, allowing the flavors to meld.
  2. Stir in lime juice and garnish with fresh cilantro before serving.

Notes

Serve over rice or noodles for a complete meal. Adjust the level of spiciness by adding chili flakes if desired.
