Rice and Coconut Mixture
  • 1 cup jasmine rice rinsed
  • 1 cup coconut milk full-fat for creaminess
  • 1 cup water
  • 1 tablespoon sugar optional
  • 1/2 teaspoon salt

Method
 

Cooking the Rice
  1. In a medium saucepan, combine the rinsed jasmine rice, coconut milk, water, sugar, and salt.
  2. Bring the mixture to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  4. Remove from heat and let it sit, covered, for an additional 5 minutes.
  5. Fluff the rice with a fork before serving.
