Ingredients
  

Pasta
  • 8 oz elbow macaroni or any pasta of choice
Cheese Sauce
  • 1 cup cottage cheese preferably low-fat
  • 1 cup shredded cheddar cheese for flavor
  • 1/2 cup milk whole or low-fat
  • 1/4 cup butter unsalted
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste
Topping
  • 1/2 cup bread crumbs for crunch
  • 1/4 cup grated parmesan cheese
  • 1 tbsp olive oil to mix with bread crumbs

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Prepare Cheese Sauce
  1. In a mixing bowl, combine cottage cheese, shredded cheddar cheese, milk, butter, garlic powder, onion powder, salt, and black pepper. Mix until smooth and well combined.
Combine Pasta and Sauce
  1. Add the cooked macaroni to the cheese sauce and stir until the pasta is evenly coated.
Prepare Topping
  1. In a small bowl, mix together bread crumbs, grated parmesan cheese, and olive oil until the crumbs are evenly coated.
Bake
  1. Preheat the oven to 350°F (175°C). Transfer the macaroni and cheese mixture to a baking dish and sprinkle the bread crumb topping evenly over the top. Bake for 20-25 minutes or until the top is golden brown and the cheese is bubbly.
Serve
  1. Remove from the oven and let it cool for a few minutes before serving. Enjoy your creamy cottage cheese mac and cheese!
