Ingredients
  

Salad Ingredients
  • 2 medium cucumbers sliced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh dill chopped
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey optional
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Vegetables
  1. Slice the cucumbers into thin rounds and place them in a mixing bowl.
  2. Halve the cherry tomatoes and add them to the bowl.
  3. Thinly slice the red onion and add it to the bowl.
  4. Chop the fresh dill and add it to the bowl.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, honey (if using), salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the salad ingredients and toss gently to combine.
  2. Serve immediately or refrigerate for 30 minutes to enhance the flavors.

This salad can be made ahead of time and stored in the refrigerator for up to 2 days.
