Ingredients
  

Meatball Ingredients
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs preferably whole wheat
  • 1/4 cup feta cheese crumbled
  • 1 large egg
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh oregano chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
For Serving
  • 1 cup tzatziki sauce for dipping
  • 1 cup cucumber sliced
  • 1 cup cherry tomatoes halved

Method
 

Prepare the Meatballs
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, feta cheese, egg, minced garlic, parsley, oregano, salt, pepper, and cumin.
  3. Mix until well combined, but do not overmix.
  4. Form the mixture into meatballs, about 1 inch in diameter.
Bake the Meatballs
  1. Place the meatballs on a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for 20 minutes, or until the internal temperature reaches 165°F (74°C).
Serve
  1. Serve the meatballs warm with tzatziki sauce, cucumber slices, and cherry tomatoes.

Notes

These meatballs can be made ahead of time and frozen for later use. Simply reheat in the oven before serving.
