- Peel and dice the sweet potatoes into small cubes.

Cooking
- In a large skillet, heat olive oil over medium heat.
- Add the diced onion and bell pepper, sauté for 3-4 minutes until softened.
- Stir in the minced garlic and cook for an additional minute.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the diced sweet potatoes, cumin, paprika, salt, and black pepper.
- Cover the skillet and cook for 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
- Taste and adjust seasoning if necessary before serving.
