  • 1 lb ground beef 80/20 blend for flavor
  • 2 medium sweet potatoes peeled and diced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup bell pepper diced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil for cooking

Method
 

Preparation
  1. Peel and dice the sweet potatoes into small cubes.
  2. Dice the onion and bell pepper, and mince the garlic.
Cooking
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the diced onion and bell pepper, sauté for 3-4 minutes until softened.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  5. Stir in the diced sweet potatoes, cumin, paprika, salt, and black pepper.
  6. Cover the skillet and cook for 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
  7. Taste and adjust seasoning if necessary before serving.

Notes

This dish can be served with a side salad for a complete meal.
