Ingredients
  

Chicken and Salad Base
  • 2 cups cooked chicken shredded
  • 1 cup romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
Jalapeno Popper Ingredients
  • 4 oz cream cheese softened
  • 1 cup jalapenos fresh, diced
  • 1 cup shredded cheddar cheese
  • 1 tbsp bacon bits cooked
Dressing
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper

Method
 

Prepare the Chicken
  1. Cook the chicken in a skillet over medium heat until fully cooked, about 15-20 minutes. Shred the chicken and set aside.
Make the Salad
  1. In a large mixing bowl, combine the shredded chicken, romaine lettuce, cherry tomatoes, and cucumber.
Prepare Jalapeno Popper Mixture
  1. In a separate bowl, mix the softened cream cheese, diced jalapenos, shredded cheddar cheese, and bacon bits until well combined.
Combine and Dress
  1. Add the jalapeno popper mixture to the salad and toss gently to combine.
  2. In a small bowl, whisk together the olive oil, lime juice, garlic powder, salt, and black pepper. Drizzle over the salad and toss again.
Serve
  1. Serve immediately or refrigerate for up to an hour before serving for a chilled salad.
