Ingredients
  

For the Sandwich
  • 8 slices bread your choice of bread
  • 4 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 medium jalapeños sliced and seeds removed
  • 4 slices bacon cooked and crumbled
  • 4 tbsp butter softened for spreading

Method
 

Prepare the Filling
  1. In a bowl, mix together the cream cheese, cheddar cheese, mozzarella cheese, sliced jalapeños, and crumbled bacon until well combined.
Assemble the Sandwiches
  1. Spread butter on one side of each slice of bread.
  2. On the unbuttered side of four slices, spread a generous amount of the cheese mixture.
  3. Top with the remaining slices of bread, buttered side up.
Cook the Sandwiches
  1. Heat a skillet over medium heat.
  2. Place the sandwiches in the skillet and cook for 3-4 minutes until golden brown.
  3. Carefully flip the sandwiches and cook for another 3-4 minutes until the cheese is melted and the other side is golden brown.
Serve
  1. Remove from skillet, slice in half, and serve hot.

Notes

Feel free to adjust the level of spiciness by adding more or fewer jalapeños.
