Ingredients
  

For the Sandwich
  • 8 slices sourdough bread
  • 4 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 medium jalapenos sliced and seeds removed
  • 4 slices bacon cooked and crumbled
  • 4 tbsp butter softened

Method
 

Prepare the Filling
  1. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, shredded mozzarella cheese, sliced jalapenos, and crumbled bacon. Mix until well combined.
Assemble the Sandwich
  1. Spread butter on one side of each slice of sourdough bread.
  2. On the unbuttered side of four slices, evenly distribute the cheese and jalapeno mixture.
  3. Top with the remaining slices of bread, buttered side up.
Cook the Sandwich
  1. Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for about 3-4 minutes until golden brown.
  2. Carefully flip the sandwiches and cook for an additional 3-4 minutes until the cheese is melted and the bread is golden brown.
Serve
  1. Remove the sandwiches from the skillet and let them cool for a minute before slicing. Serve warm.

Notes

Feel free to adjust the number of jalapenos based on your spice preference. You can also add other ingredients like avocado or different types of cheese.
