Ingredients
  

Marinade
  • 4 pieces chicken thighs bone-in, skin-on
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon allspice ground
  • 1 teaspoon thyme dried
  • 1 teaspoon cinnamon ground
  • 1 teaspoon nutmeg ground
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt
  • 2 cloves garlic minced
  • 1 inch ginger fresh, grated
  • 2 tablespoons lime juice freshly squeezed

Method
 

Marinate the Chicken
  1. In a blender, combine olive oil, soy sauce, brown sugar, allspice, thyme, cinnamon, nutmeg, black pepper, salt, garlic, ginger, scotch bonnet pepper, and lime juice. Blend until smooth.
  2. Place the chicken thighs in a mixing bowl and pour the marinade over them. Ensure the chicken is well coated.
  3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.
Grill the Chicken
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and let excess marinade drip off.
  3. Place the chicken on the grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).
  4. Remove the chicken from the grill and let it rest for 5 minutes before serving.

Notes

Serve with rice and peas or a fresh salad for a complete meal.
