Marinate the Chicken
- In a mixing bowl, combine green onions, thyme, allspice, brown sugar, cayenne pepper, salt, black pepper, nutmeg, ginger, garlic, soy sauce, and lime juice. Mix well to form a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
Grill the Chicken
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and let excess marinade drip off. Discard the remaining marinade.
- Place the chicken on the grill, skin side down. Grill for about 6-7 minutes, then flip and grill for another 6-7 minutes until the internal temperature reaches 165°F (75°C).
- Remove from the grill and let rest for 5 minutes before serving.
Notes
Serve with rice and peas or a fresh salad for a complete meal.
