Ingredients
  

Chicken and Vegetables
  • 1 lb boneless chicken thighs cut into bite-sized pieces
  • 2 tablespoons olive oil for cooking
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium bell pepper diced
  • 2 carrots sliced
  • 1 cup chicken broth low sodium
  • 1 cup uncooked rice white or brown
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 cup frozen peas added at the end

Method
 

Cooking the Chicken
  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add the chicken pieces to the pot. Season with salt, pepper, thyme, and paprika. Cook until the chicken is browned on all sides.
Adding Vegetables and Rice
  1. Stir in the diced bell pepper and sliced carrots, cooking for another 3-4 minutes.
  2. Add the rice and chicken broth, bringing the mixture to a boil.
Simmering
  1. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.
  2. Stir in the frozen peas during the last 5 minutes of cooking.
Serving
  1. Remove from heat, fluff the rice with a fork, and serve hot.
