Method
Cooking the Chicken
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the chicken pieces to the pot. Season with salt, pepper, thyme, and paprika. Cook until the chicken is browned on all sides.
Adding Vegetables and Rice
- Stir in the diced bell pepper and sliced carrots, cooking for another 3-4 minutes.
- Add the rice and chicken broth, bringing the mixture to a boil.
Simmering
- Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.
- Stir in the frozen peas during the last 5 minutes of cooking.
Serving
- Remove from heat, fluff the rice with a fork, and serve hot.
