Preparation
- Rinse the dried pinto beans under cold water and remove any debris.
- Soak the beans in a large pot with 4 cups of water for at least 8 hours or overnight.
Cooking
- Drain the soaked beans and rinse them again.
- In the same large pot, add the soaked beans and cover with fresh water (about 4 cups).
- Bring the water to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 1.5 to 2 hours, or until the beans are tender.
- Add the chopped onion, minced garlic, salt, pepper, and cumin during the last 30 minutes of cooking.
- Taste and adjust seasoning as needed before serving.
Notes
Serve the pinto beans as a side dish, or use them in tacos, burritos, or salads.
