Method
Prepare the Baking Dish
- Grease a 9x9 inch baking dish with butter or cooking spray.
Melt the Butter and Marshmallows
- In a saucepan over low heat, melt the butter.
- Add the mini marshmallows and stir until completely melted and smooth.
- If using, stir in the vanilla extract.
Combine with Rice Cereal
- Remove the saucepan from heat and add the rice cereal.
- Stir until the cereal is evenly coated with the marshmallow mixture.
- If using, fold in the chocolate chips.
Shape and Cool
- Pour the mixture into the prepared baking dish.
- Press down firmly with a spatula to create an even layer.
- Allow to cool at room temperature for at least 30 minutes before cutting into squares.
Notes
For added flavor, consider mixing in nuts or dried fruits.
