Method
Cooking the Rice
- In a medium saucepan, combine the rice and 1 cup of water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed.
Making the Pudding
- Add the milk, sugar, and salt to the cooked rice in the saucepan. Stir well to combine.
- Increase the heat to medium and cook, stirring frequently, until the mixture thickens, about 15 minutes.
- Remove from heat and stir in the vanilla extract.
Serving
- Spoon the rice pudding into serving bowls. Sprinkle with ground cinnamon and add optional toppings if desired.
- Serve warm or chilled, according to preference.
Notes
For a creamier texture, you can substitute some of the whole milk with heavy cream.
