Ingredients
  

Chicken Marinade
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup salsa verde store-bought or homemade
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Toppings
  • 1 cup chopped fresh cilantro
  • 1 cup diced avocado
  • 1 cup crumbled queso fresco
  • 1 lime cut into wedges

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine salsa verde, olive oil, ground cumin, garlic powder, salt, and black pepper.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Grill the Chicken
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and discard the marinade.
  3. Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
Serve
  1. Remove the chicken from the grill and let it rest for 5 minutes.
  2. Slice the chicken and serve topped with chopped cilantro, diced avocado, and crumbled queso fresco. Serve lime wedges on the side.

Notes

For a spicier kick, add diced jalapeños to the marinade or as a topping.
