Preparation
- Prepare all ingredients by chopping vegetables and measuring out rice and sauces.
Cooking
- Heat vegetable oil in a wok over medium-high heat.
- Add garlic and ginger, sauté for 30 seconds until fragrant.
- Add shrimp and cook until pink and opaque, about 3-4 minutes. Remove shrimp and set aside.
- In the same wok, add peas, carrots, and green onions. Stir-fry for 2-3 minutes.
- Push vegetables to the side, crack eggs into the wok, and scramble until cooked.
- Add the cooked rice, shrimp, soy sauce, and sesame oil. Stir-fry everything together for 3-4 minutes.
- Season with salt and pepper to taste. Serve hot.
Notes
For best results, use day-old rice as it is drier and will fry better without becoming mushy.
