Ingredients
  

Vegetables
  • 2 medium zucchini sliced
  • 2 medium yellow squash sliced
  • 1 cup bell pepper diced
  • 1 cup onion diced
  • 2 cloves garlic minced
Seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Method
 

Preparation
  1. Wash and slice the zucchini and yellow squash into thin rounds.
  2. Dice the bell pepper and onion, and mince the garlic.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add the diced onion and bell pepper to the skillet and sauté for 5 minutes until softened.
  3. Add the minced garlic and sauté for an additional minute.
  4. Stir in the sliced zucchini and yellow squash, and season with salt, pepper, oregano, and basil.
  5. Cook for 10-15 minutes, stirring occasionally, until the vegetables are tender.
  6. Remove from heat and serve warm.

Notes

This dish can be served as a side or topped with cheese for a main course.
