Prepare the Peanut Sauce
- In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and water until smooth.
Cook the Chicken
- Heat a large skillet over medium heat. Add the chicken pieces and cook for about 5-7 minutes, or until browned and cooked through.
Add Vegetables
- Add sliced bell pepper, broccoli florets, and sliced carrots to the skillet. Stir-fry for another 5 minutes until vegetables are tender-crisp.
Combine with Sauce
- Pour the peanut sauce over the chicken and vegetables. Stir to coat everything evenly and cook for an additional 2-3 minutes until heated through.
Serve
- Serve the Thai peanut chicken over rice or noodles, garnished with chopped peanuts, cilantro, and lime wedges.
Notes
Adjust the spice level by adding red pepper flakes or sriracha to the peanut sauce if desired.
