  • 1 cup fresh raspberries
  • 2 large lemons (zested and juiced)
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1 tsp baking powder
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix melted butter and granulated sugar until creamy. Add flour and combine until crumbly. Press into the bottom of an 8×8-inch baking pan.
  3. Bake the crust for about 15 minutes until lightly golden.
  4. While cooling, whisk eggs, granulated sugar, lemon juice, lemon zest, baking powder, and raspberries until blended.
  5. Pour the filling over the baked crust and return to the oven for 20-25 minutes until just set.
  6. Allow to cool completely before cutting into squares and dust with powdered sugar before serving.
